Sweet Potato Enchiladas
Sweet potato enchiladas by Skinytaste is a fast weeknight meal you can throw into the crockpot earlier in the day, that will be ready when you get home from those long game nights at school!
Root vegetables, green onions and broccoli are all colorful veggies and full of nutrients. I like to substitute purple sweet potatoes for an extra punch of nutrition. You can either bake sweet potatoes earlier in the day or wrap them in foil and put them in the crock pot with chicken. After the potatoes are cooked, take out the chicken and shred and add back to the crockpot with a jar of red enchilada sauce. I recommend Siete foods red enchilada sauce.
Assemble potato, shredded enchilada chicken and top with avocado, Greek yogurt and green onions. Serve with a side of sauteed broccoli drizzled with EVOO and salt and pepper. Kid approved, fast, easy and nutritious!
