Quinoa Kale Blueberry Salad
This delicious summer salad by The Real Food Dietitians is a wonderful dish to serve alongside a simply grilled protein of choice. The salad has a punch of nutrients that will leave you feeling satisfied and truly nourished. What I love about this dish is that it can be a complete meal. It has greens, berries, healthy fats, protein and complex carbohydrates! When buying your produce make sure to choice organic, if possible, especially with the blueberries and kale because they are on the dirty dozen list for being highly sprayed with pesticides. As for the cheese, I opt for a goat cheese, but a good feta would be nice too. It is best to crumble your own soft cheeses too, to avoid the anti-caking agent that is found in so many pre-packed crumbles. The roasted and salted Wonderful pistachios are a great choice for the nut. The flavors of everything in this salad come together so nicely to give a bright clean taste that will leave you wanting more! Even my son, who does not eat much salad, went back for seconds on this one! What a win!
