Nourishing (Gluten Free & Dairy Free) Zucchini Blueberry Muffins

Great meal prep for a quick school breakfast or when you have overnight house guests!

These nourishing muffins by Ambitious Kitchen are a family & friends pleaser! They are made with almond flour and oat flour (use gluten free if needed), organic shredded zucchini and pure organic maple syrup to sweeten. The recipe calls for chocolate chips, but I switch out for fresh organic blueberries. The great thing about muffins is you can add to them to make a bigger punch of nutrition. I like to add flax and/or chia and top with walnuts. You can also add shredded carrots! Anytime you can hide extra veggies in is a win! The zucchini and blueberries make these muffins extra moist. I like to add a big spoonful of nut butter on top to give some extra protein and healthy fats. Remember when using nut butters, look at the ingredients for just nuts and no added oils or fillers.
