Jammy Spinach Egg Bites

The perfect meal prep breakfast to have on hand for the week. This one is on a weekly rotation at our house. It’s the perfect pair with Amylu breakfast sausage, organic berries and a spoonful of your favorite nut butter. Start your morning strong with protein, healthy fats and color!

Makes: 1 dozen egg bites

Prep/Cook time: 20 min

Ingredients:

  • 1 dozen organic pasture raised eggs

  • 1 c. organic spinach

  • 2 Tb. Extra virgin olive oil

  • Everything but Bagel Seasoning

  • Salt and Pepper to taste

Directions:

  1. Preheat oven to 350

  2. Get a 12 cup muffin tin (my favorite non-toxic muffin tin is Caraway) and brush olive oil in each cup

  3. Place 2-3 spinach leaves in the bottom of each cup

  4. Crack an egg in each muffin cup

  5. Sprinkle Everything but Bagel seasoning on top of each one and salt and pepper to taste (if your EBB seasoning does not have salt)

  6. Bake for 14-15 min to your desired doneness. If you want them to be more jammy 13-14 min.

  7. Enjoy right away or store in an airtight container in the fridge for 4-5 days.

Notes:

When cooking your egg bites leave room for additional cooking for reheating. I have found that 14 min is the sweet spot!
