Chicken Tacos

Serves:
4 Great 30 min.weekday meal that will be a favorite for the whole family! On repeat!!

Instructions

  1. Preheat oven to 400

  2. Marinate 3 organic chicken breasts in a ziplock bag with ½ packet of Siete taco

    seasoning, 2 Tb. avocado oil, juice from 1 lime

  3. Line a sheet pan with parchment paper and bake chicken at 400 for 20 min or an internal temp of 165

  4. While chicken is cooking slice 2 red peppers, 1 sweet onion, 1 green pepper, put in a ziplock with the other ½ of the siete seasoning and 1 Tb of avocado oil and

  5. shack up to coat

  6. Take chicken out of the oven and slice and then return with the pan and spread the veggies on the pan. Return to the oven and bake for 10 min to cook veggies.

  7. Prep guacamole: 2 large avocados mashed, ¼ of sweet onion from veggies diced, juice from 1 lime, handful of chopped cilantro and salt and pepper to taste

    *For quick prep use Fillos black beans and rice and/or Fillos cuban black beans (great ingredients)

  8. To assemble bowls: Fillos rice and beans, veggies, chicken, homemade guac,

    sour cream, Mateo’s salsa, shredded grass-fed cheddar

  9. To assemble tacos: Siete cassava wraps heated on open flame, chicken, veggies, Fillos beans, guac, sourcream, Mateo’s salsa, shredded grass-fed cheddar
