Zucchini Taco Boats
A quick, simple nourishing meal that is so delicious! It has quality protein, healthy fats and complex carbs that will leave you feeling satisfied and excited for leftovers. This meal is keto friendly and gluten & dairy free.
Serves:4-6
Cooking/Prep time: 30 min.
Ingredients:
4 large organic zucchinis
2 Tb. Avocado oil
2 lb. organic grass-fed beef
1 organic red pepper
1 organic green pepper
1 red onion
1 package of Siete taco seasoning
3 Avocados
1 lime
1 handful of organic cilantro
Mateos Salsa or salsa of choice
A Dozen Cousins cuban black beans or black beans of choice
Salt and Pepper to taste
Directions:
Preheat oven to 400.
Wash and slice zucchini long ways and scoop out the inside seeds. Place on a baking sheet with parchment paper and brush avocado oil on top of each one and season with salt and pepper. Bake for 20 min.
While baking, wash and dice veggies ( save a 1/4 of onion for guacamole). Saute veggies with avocado oil and salt and pepper until tender. Set aside.
Saute beef until fully cooked and drain, put back in saucepan and add taco seasoning as directed on package. Mix veggies and beef together and set aside.
Make guacamole. Add diced onion, chopped cilantro, juice from 1 lime, salt/pepper and avocado and mash until blended.
Heat beans.
Place 2 zucchini boats on a plate, fill with taco meat, a spoonful of black beans, add guacamole and salsa on top. Enjoy!
