Spinach salad with pistachios, medjool dates, avocado and ginger-lemon vinaigrette

This salad was inspired by a similar salad I enjoyed at the Cookshop restaurant in NYC. The tangy ginger-lemon vinaigrette pairs perfectly with the salted pistachios and chewy sweet dates.

Serving: 4-6

Prep time: 10 min.

Ingredients:

  • 1 box of organic spinach

  • 8-10 organic pitted medjool dates

  • 1/4 c. salted pistachios

  • 1 avocado

  • protein of choice (pulled rotisserie chicken is a great option for a quick meal)

  • lemon-ginger vinaigrette

Directions:

Make salad dressing according to the recipe link above. Set aside. Put organic spinach in a large salad bowl. Pour dressing over salad (you will not need all of it). Toss until fully coated. Cut dates into fourths. Chop pistachios and dice avocado. Put all toppings on the salad. Season with pepper and add protein if using. Enjoy!

Notes:

This salad is loaded with nourishing ingredients. The lemon and ginger will boost immunity, help with digestion and detoxification. The dates are full of fiber, antioxidants and are considered a superfood! Pistachios are full of vitamins and minerals and are a complete plant protein with healthy fats.
