Seasonal weeknight stir fry

Stir fry meals are one of my favorites because you can add tons of veggies and rotate what goes in depending on the season and what you have on hand! The base stays the same, but veggies and protein can change up each time! This meal is quick, nourishing and delicious. Hope you enjoy as much as my family does.

Serves:4

Prep/cook time: 25 min

Ingredients:

  • Any medley of vegetables-pictured are in season bok choy, red and yellow peppers, broccoli, shiitake mushrooms, and yellow onion

  • 1 lb. protein of choice- pictured is an ancestral blend of grass-fed beef

  • Rice of choice-pictured is A Dozen cousins bone broth rice (1-2 bags)

  • Organic pasture raised eggs (1 egg per dish)

  • 3 gloves fresh garlic

  • 3 Tb. Bragg’s coconut aminos

  • 1-2 Tb. organic low sodium tamari

  • 1-2 tsp. fresh grated ginger

  • 1 Tb. avocado oil and/or sesame oil

  • 1-2 green onions chopped for garnish

  • 4-5 basil leaves chopped for garnish

  • sesame seeds for garnish

  • salt and pepper to taste

Directions:

  1. Wash and cut veggies

  2. In a fry pan, saute minced garlic with protein until browned and cooked thoroughly. Set aside.

  3. Saute all veggies in another large pan with a Tb. of avocado oil and cook about 5-7 minutes, make sure not to over cook the veggies.

  4. Add cooked meat, coconut aminos, sesame oil, tamari and seasonings to the veggies and simmer, while preparing the rest of the meal.

  5. Fry sunny side eggs in the fry pan from the greased meat pan for about 2-3 min. (you want it to be a little runny)

  6. Cook rice

  7. Wash and prepare basil and green onions

  8. Plate in a shallow bowl. Rice, veggie/meat mixture, sunny side egg on the side with basil, green onions and seasame seeds on top.

Notes:

Get organic produce if possible and have fun trying new seasonal veggies!

Force of Nature ancestral grass-fed beef blend is a great choice for the protein. It is loaded with B vitamins and has a great taste.

A Dozen Cousins bone broth rice packets are to have on hand for quick meal prep. It is made with bone broth so you are getting extra protein and collagen!

Also, I opt for organic coconut aminos over soy sauce because it is lower in sodium, and gluten free.
