Herby Lemon Garlic Chicken and Potatoes

This meal by Ambitious Kitchen is full of fresh spring time veggies! I added carrots and leeks to mine for an extra punch of nutrition. All the vegetables in this dish are April vegetables! Carrots, leeks, lemons, potatoes, and onions! I encourage you to try a new vegetable each month. This was my first time preparing and cooking leeks! They are so easy to prepare and have so many nutritional benefits to them. I love trying a new vegetable or fruit each month that I have not tried, to experiment with new recipes and flavors for my family. This is a great meal prep
