Chicken Enchiladas

Chicken Enchiladas, by Nourished By Nutrition. This dinner has become a top 10 for my family! It is quick and simple to make ahead of time, so later you can pull it straight out of your fridge to the oven. It is full of flavor and so easy! Perfect 30 min weekday or weekend meal. I love the fresh toppings on top of radishes, green onions, cilantro, jalapeños, red onions and sliced avocado and lots of extra sautéd spinach when making the mixture to fill the wraps! I use Siete Foods cassava flour wraps and organic rotisserie chicken (to make it easier).

Also when picking a queso and salsa verde make sure to look at the ingredients and keep the level of spice in mind! I recommend using Siete Foods green enchilada sauce and Siete Foods plant based queso. I know I’m getting “real” ingredients when using that brand. Enjoy!
